The perfect luncheon treat or unexpected dessert. Strawberry soup served chilled is refreshing and leaves a sweet taste of summer in your mouth.
Mari’s Summer Strawberry Soup
Ingredients:
- 2 cups hulled strawberries (greens plucked out) & cut up
- 1/4 cup sugar
- 1/2 pt 1 pint Vanilla yogurt
- 1 cup (evaporated) milk, half & half or heavy cream (your choice)
- 1/2 cup red wine
Blend all of the above in a blender – Chill for 2 hours – Serve in a small cup – glass looks lovely and top with one beautiful strawberry.
Hint: Make the soup to the consistency of your choice – think or thin by adding more milk/cream which will thicken or thin to your liking.
