Ugh!! I hate when people repost images for things from Pinterest, but don’t use the original link. What is in the first pic??? It appears to use blueberries and watermelon, but what is the white? Cream cheese squares?
They are white cheddar or possibly monterey jack cheese squares

I agree EverReadyMom! But It does look like cubed cheese. Perhaps you could use a light honeydew melon. I don’t know what’s on the open faced sandwich. Blueberry, tomatoes and banana? Not a good combo.
pineapple would be yummy as the ‘white’ as well.

For the white, I would use a crisp apple…..That speaks “America” to me more than cheese. AND it would keep the fruit theme.
Looks like the open face sandwiches have strawberry jelly. These are so cute!!

I am guessing it is feta cheese. It goes well with watermelon.

The Cheese is Feta and it does go well with watermelon. You could also use starwberries and a sharp cheddar. The sandwiches are Toast with cream cheese, strawberry jam. Don’t know where fruit roll ups came from?
The open faced sandwhich doesn’t look like tomato or fruit rollup. It looks like toast, creamcheese, then a layer of strawberry jam, banana and then the blueberries. And the first one looks like pepperjack cheese cubes with the watermelon.
To the person who said the open faced sandwich has tomato HELLO that is obviously strawberry jam with cream cheese and blueberries and bananas. You do not have any cooking skills if you thought someone would put tomato on that.
How about using sliced banana for the white stripe in #1. Then serve it with fresh whipped cream on the side. Yum!
Bananas brown quickly when cut up as do apples. Something to consider.
you can use pineapple juice or fruit frest to keep fruit from turning brown.
So why couldn’t they tell us what they used for the white part? I think this beats the old red white and blue cake thing for sure

I think it would be fun to mix up a container of vanilla yogurt and some Cool Whip and just make the white stripes out of that instead of the cheese in the flag fruit tray. It’s a great fruit dip.

Ohhhh…..I`m gonna try that flag idea…only instead od watermellon and cheese, i`m going to use strawberries and then globs of fruit dip between them to look like the white stripes. The fruit dip is made out of equal ounce amounts of softened cream cheese and marshamallow cream and fruit is yummy dipped in it……very hard to stop eating it!!!!!
i’d like to try to redo this with tomotoe; mozzarella cheese and i think keep the blueberries. a take on traditional italian mozzarella; tomatoe salad with the blueberries added. Think you’d need to serve italian bread on the side?

Why not the white inside of pound cake instead of cheese that would be firm enough to pick up I think or maybe fresh pear, whatever the white fruit I think fruit fresh would be needed. another idea is the white wedding cookies or any cookie dusted with conf sugar on top, maybe before baking, dont know if it would stay white that way as I never tried it.
I think what works together is blueberries, watermelon and jicama would work, it’s white and with a nice dip on the side. I think that’s what I’ll do.

Pineapple juice for keeping apples and bananas white – makes them work in fruit displays – a sweet cracker with cream cheese, marshmallow cream with the strawberries, bananas and blueberries – sweet treat instead of sandwich like – yummy!
The first picture is not cheese for the white it is fresh pinapple….
You could use fresh pineapple instead of cheese.
